Vegan cheese and walnut truffles

  1. In a bowl, mix together the pecans, pistachios, black pepper and cranberries.
    In a large bowl, mix the cheese, Vegan Protein Drink Mix and water until smooth (add a little water if necessary).

    With your hands, roll a small amount of the mixture into a ball (about the size of a walnut), then roll it in the pecan, pistachio, pepper and cranberry mixture. Set aside on a clean plate. Continue with the remaining ingredients to make about 20 truffles.
    Chill for 30 minutes before serving.
